Art of the Artichoke

I apparently bought the biggest artichoke I've ever seen last time I went to the store. I was going to make two tiny ones I had from Trader Joe's but they were no good, so I pulled out the one I bought at Safeway and was shocked at how huge it was. Apparently artichokes are antioxidant power houses and they have more antioxidants than any other vegetable. Well that's what the package of the little ones said, so I if I eat the big one I should be good for about a week? It's still cooking, who know's how long it will take, it's been just over an hour and it's not done yet. Oh, plus I hate preping the artichoke because I'm always stabbing myself on the thorns, when I cut them off they shoot all over the place, and after handeling it before it's cooked it leaves my hands smelling nasty and leaving a gross taste on them that only comes off after like 4 washes. It's a good thing I love them so much!!

But apparently it was the night of giant food because I pulled out some chicken to put in the crock-pot, usually I wrap two pieces together and freeze them, well I unwrpped this one and was poking at it to break them appart only to discover it was one giant piece, almost the size of the bottom of the crock-pot. Crazy business!

I didn't even eat it after all that because it took so long and it still wasn't done but it didn't sound good anymore.
